- 5 large eggs
- 2 cups milk (whole or 2%)
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
- 6 tablespoons sugar
- 1 tablespoon finely grated lemon zest
- 1/8 teaspoon kosher salt

- Serving: Powdered sugar and Maple syrup (optional)
INSTRUCTIONS
- Cut bread into 2-3 cm cubes
- Butter a 20 x 30cm baking dish or ramekins for individual servings. Spread half of the bread cubes in an even layer in the prepared pan. Top with 2/3 of the blueberries, followed by the remaining bread cubes and blueberries.
- Whisk the liquids. Pour the mixture over the bread cubes, pressing down gently (so you don’t burst the berries) to make sure the egg mixture is absorbed.
- Let it soak for at least 30 minutes or leave it overnight.
- Preheat the oven to 170°C
- Bake casserole for 45 minutes
- Let cool and dust with powdered sugar. Drizzle maple syrup just before serving.
