Breakfast is the most important meal of the day, and with a good breakfast in, you’ll be able to tackle the day and make the most of every moment.

Berry French Toast Casserole

This Casserole is also perfect for brunch!

INGREDIENTS

  • 450 gr bread – stale bread or rolls works perfect for this dish
  • 5 large eggs
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 6 tablespoons sugar
  • 1 tablespoon finely grated lemon zest
  • 1/8 teaspoon kosher salt
  • 2 tablespoons unsalted butter, diced
  • 1 1/2 (or 2) cups blueberries, frozen or fresh – strawberries, raspberries or cranberries will also work
  • Serving: Powdered sugar and Maple syrup (optional)

INSTRUCTIONS

  1. Cut bread into 2-3 cm cubes
  2. Butter a 20 x 30cm baking dish or ramekins for individual servings. Spread half of the bread cubes in an even layer in the prepared pan. Top with 2/3 of the blueberries, followed by the remaining bread cubes and blueberries.
  3. Whisk the liquids. Pour the mixture over the bread cubes, pressing down gently (so you don’t burst the berries) to make sure the egg mixture is absorbed.
  4. Let it soak for at least 30 minutes or leave it overnight.
  5. Preheat the oven to 170°C
  6. Bake casserole for 45 minutes
  7. Let cool and dust with powdered sugar. Drizzle maple syrup just before serving.

Breakfast Frittata

You can make a Frittata with whatever you have on hand.

FRITTATA INGREDIENTS

  • 6 large eggs
  • 1/4 cup heavy cream
  • 1 cup cheese
  • 2 cups of vegetables and/or meat

INSTRUCTIONS

  1. You will need a cast iron or oven-safe skillet (non-stick)
  2. Preheat the oven to 200°C
  3. Whisk the eggs, heavy cream, and 1/2 teaspoon salt together in a small bowl.
  4. Cook meat and vegetables in skillet.
  5. Spread meat and vegetables into even layer in skillet and sprinkle cheese on top. Pour the egg mixture into the skillet.
  6. Cook for a minute or two until you see the eggs beginning to set
  7. Bake the frittata for 8 – 10 minutes.

FRITATTA FILLING IDEAS

  • Crispy bacon, sauteed potatoes and spinach with garlic and thyme
  • Parmesan cheese, sauteed onions with fresh parsley, basil, dill and tarragon
  • Cuban – yellow mustard, Swiss cheese, chopped salami, roast pork and ham with dill
  • Greek – spinach, Kalamata olives and fresh basil
  • Cream cheese, capers and dill with smoked salmon. Serve with sour cream
  • Roasted mushrooms, asparagus with fresh parsley and Asiago cheese
